This is one of my favorite soups growing up. Even as a Viet, I liked it better than pho!
The broth is traditionally made with beef broth, but the vegetarian version, which is just tomatoes and salt, tastes just as good. The pescatarian version of this would be with a tiny smidge of crab paste.
You can add in a bunch of shredded lettuce to compensate for a lack of noodles. This essentially mirrors Puerto Rican “Sopa de Pollo”, which is my go-to order at Latino restaurants, if they have it.
