Homemade sushi is quick and great for leftovers or ingredients that you don’t have quite enough to make a lot of anything.
Pro Tip:
I used leftover rice that had been refrigerated. To moisten it up for sushi, I soaked a sheet of paper towel and laid it over the bowl of rice and microwaved it for about a minute.
For aesthetics (because I eat with my eyes), I had to chop the ugly end pieces (and eat them while fixing this lunch. It was delicious.).
Household Tip:
Keep some roasted seaweed around. It’s a staple pantry item :)
