Veggie Bacon and Eggs on Toast with Mayo Drizzle

Great Choice for a SUPER Lazy Evening

Veggie breakfast for dinner!

Why: It's one of those days where I have sat at my computer all day and yet I still don't feel like getting up from my desk, even to eat. Had a meeting until 8:40PM and was like, "well, it's too late to grab $1 pizza/beer/wine at Al's, and I really shouldn't eat a lot this late. Texted a friend for suggestions:

Really, he was onto something. I was just THAT lazy.

Finally settled on my Veggie Breakfast for Dinner (pictured above). What:

Step 1: Microwave an egg in a small bowl. There's actually a technique to this, and I use it for sandwiches and ramen. You have to listen for your egg like it's popcorn that's going to burn at any second. If you don't stop the microwave as soon as it starts to sizzle, the egg will explode. I literally stand there for 2 minutes, stopping the microwave every 30 seconds or so, letting the egg cool in between.


*Oh, and spray the small bowl down with olive oil or butter spray for easy clean-up!* Step 2. Start toasting your bread/buns. There's a TWSS joke in there somewhere. Step 3: Microwave 2 slices of Morning Star veggie bacon between two paper napkins for 60 seconds. == Add whatever garnish you like, style it like I do or just slap it all together. Tastes the same either way.== Dishes afterward? 1 small bowl and 1 small plate that you served yourself dinner with. :)
